Oat Flax Pancakes with Steamed Cinnamon Apples

The flavour combination of oat, flax, and steamed cinnamon apples is a great start to any day! After all, it is sweet enough to please your kids' tastebuds, but healthy enough to please your health-conscious mentality!  Have some fun with these pancakes by making them into seasonal shapes!

Ingredients:

¾ cup (175 mL) all purpose flour
½ cup (125 mL) large flake oats
¼ cup (60 mL) ground flax seed
2 tbsp (30 mL) granulated sugar
1 tbsp (15 mL) baking powder
Pinch salt
2 eggs, separated
1 cup (250 mL) plain 0% Greek yogurt
²/³ cup (150 mL) milk
1 tbsp (15 mL) each canola oil and butter, melted
1 large Honey Crisp apple, sliced
1 tbsp (15 mL) water
½ tsp (2 mL) ground cinnamon

What You Do:

  1. In a large bowl, whisk together flour, oats, flax seed, sugar, baking powder and salt.
  2. In another bowl, whisk together egg yolks, yogurt, milk, oil and butter. Pour over flour mixture and stir to combine.
  3. Beat egg whites until stiff peaks form. Gently fold into pancake batter.
  4. Heat a griddle or large nonstick skillet over medium heat and using 1/4 cup (60 mL) measure, pour pancake batter onto the pan.
  5. Cook until bubbles appear on top (about 2 minutes) and turn over to cook other side.
  6. Repeat with remaining batter.

Cinnamon Apple Topping:

  1. Meanwhile, in a small saucepan, combine apples, water and cinnamon.
  2. Cover and steam over medium heat about 5 minutes or until apples are softened.
  3. Top pancakes with apples to serve.
